    Dong Ti, Dung Ting, Dong Ding — The Frozen Peak. This tea has a powerful bouquet of lilac, vanilla and clover honey. It is the oldest of Taiwan oolongs. It's the green type oolong, which means only slightly fermented. Leaves are coiled into irregular balls, and they offer light-green, almost yellow-green brew of full and expressive flourish sweet taste with balanced grassy tones.

    Suggested Pairings: All oolongs make ideal food pairings, both within and alongside, as their lingering finishes will marry well with chosen accompaniments. The sweet finish of oolong can pair beautifully with lightly spicy or curried foods, smoked foods, shellfish, buttery desserts, and fresh fruit.

    A delicate Chinese Oolong from Fujian province with hints of orchids. The semi fermentation of this tea gives it a little more body than a green tea but less body than a black tea. A cup to be enjoyed in quiet moments.

    Suggested Pairings: Iron Goddess pairs especially well with pork and with spicy or smoky foods, fruits, caramel, and chocolate.

    This Oolong is our staff favorite. Grown in the Wuyi Mountains of China, the tea plants grow at an altitude of 1500-4000 feet above sea level. This oolong is often referred to as "premium Oolong with sweet milk and light orchid notes peeking out from the camellia depth". Make sure you make multiple infusions with this Oolong as it tends to get better with every infusion. The milky flavour is a result of sudden change of temperature during harvest.

    Suggested Pairings: This Oolong is ideal with pork or spiced chicken or fruity, earthy desserts, spiced tea breads, basil and stone fruits.

    A smooth five year aged tea from China's Yunnan province which exhibits hints of earth and malt. The relatively high humidity from inside the dark cave where this Pu-erh was aged has mellowed its elemental character in comparison to a younger 1 year aged tea.

    Suggested Pairings: Pairs well with rich fatty foods, cheese and chocolate.
