Citrus Splash Pecan Quinoa Salad

Yields: 4 servings

Ingredients:

  • 1 cup Quinoa
  • ½ cup of Citrus Splash Tea leaves
  • 1/3 cup coarsely chopped pecans
  • 10 tablespoons fresh orange juice
  • 2 tablespoons of olive oil
  • 1 teaspoon freshly grated orange zest
  • 1 teaspoon chopped fresh lemon thyme leaves
  • ¼ teaspoon salt
  • sprigs of lemon thyme (optional)
  1. Let citrus splash tea leaves soak in half the orange juice for 3o minutes
  2. Cook Quinoa according to package directions.
  3. Transfer the quinoa to a bowl and let it cool to room temperature.
  4. Add the Citrus Splash tea, orange juice and pecans. Whisk together olive oil, orange zest, thyme and salt.
  5. Pour the dressing over the quinoa.  Toss and fluff with a fork.
  6. Add sprigs of lemon thyme to the top. Serve!
