Dong Ti, Dung Ting, Dong Ding – The Frozen Peak. This tea has a powerful bouquet of lilac, vanilla and clover honey. It is the oldest of Taiwan oolongs. It’s the green type oolong, which means only slightly fermented. Leaves are coiled into irregular balls, and they offer light-green, almost yellow-green brew of full and expressive flourish sweet taste with balanced grassy tones.

Suggested Pairings: All oolongs make ideal food pairings, both within and alongside, as their lingering finishes will marry well with chosen accompaniments. The sweet finish of oolong can pair beautifully with lightly spicy or curried foods, smoked foods, shellfish, buttery desserts, and fresh fruit.

*Lightly infuse tea with freshly boiled water then rinse off. Re-infuse the tea and pour after about 1 minute steep.
